Just pop the SD card in your PC and edit the file run.sh - there's an example in file.  Use Notepad++ ratther than any of Windows built in editors.  Make sure to safely eject the card when you're done.

Let me know if that isn't clear.  Hope it helps.

Open run.sh from the boot partition using Notepad++ (https://notepad-plus-plus.org/)
look for this section (around the middle, line 30ish):

# If you want to auto load a game put it here. eg.
#/boot/firmware/launchers/mame274.sh simpsons

Say you want to open the game Galaga and its a mame279 ROM, change to this:

# If you want to auto load a game put it here. eg.
/boot/firmware/launchers/mame279.sh galaga

make sure to remove the hash tag and save file, reboot.
Should now start up straight the Galaga
The Grid. A digital frontier. I tried to picture clusters of information as they moved through the computer. What did they look like? Chips? Motorcycles? Were the circuits like freeways? I kept dreaming of a world I thought I'd never see. And then. One day. I got in.
